Fresh summer flavors make this salad a natural for our Terrazza menu.  Enjoy this recipe with friends the next time you're hosting lunch on the deck.  Or, if you don't have time to cook, bring the whole crew to Bella Fortuna!

Panzanella Salad

1 lb. day-old bread (diced), crust removed, soaked in water and squeezed

3 ripe tomatoes (diced or smashed)

1 red onion (thinly sliced)

1 cucumber (peeled, seeded and thinly sliced or diced)

1 cup fresh basil (torn)

1/3 to 1/2 cup extra virgin olive oil

1/4 to 1/3 cup red wine vinegar

salt and freshly ground pepper
 

In a mixing bowl combine all ingredients.  Do not use all the oil or the vinegar at once.  Mix gently and season the way you like.

 Let rest 10 minutes and serve.
