Cheesemaker Sue Kurta brings an interactive presentation to Bella Fortuna North as she teaches attendees how to make Mozzarella cheese in a hands-on session. Sue began making cheese as a hobby, but what started as a hobby soon became a passion. While living on the east coast she took courses and workshops in Vermont and apprenticed on an organic goat farm in Maine. She returned to her home state of Michigan and began Boss Mouse Cheese on an historic 1867 Michigan Centennial farm near Kingsley. Sue uses pasteurized, grass-fed cow’s milk for her cheeses which she makes one wheel at a time. She combines traditional techniques with modern recipes to make her artisan cheeses and smoked butters.
